As a hop-focused brewery we study hop development and this beer is assembled from two cultivars with incredible potential and an already established star.
One is Sabro, formerly known as HBC 438, which debuted in 2018 from a pedigree from the female neomexicanus, which has an actual wild history of its own. For those paying attention, you’ve likely seen this hop popping up a bit more. It’s aromatics point towards tangerine, tropics, and hints of cedar and mint. With Solemn Gardens we grab coconut and create a solid tropical housing for the other more featured hop of this beer which you are less likely to be familiar with, HBC 472. Still experimental, we first toyed with this hop in late 2017 with Istigkeit, a hoppy Brown. With that beer we pulled vanilla and an almost bourbon-like character, in Solemn Gardens it stacks on Sabro for the ultimate refreshment in lush coconut sapor. 472 brings surges the Sabro tropics and kicks the stocked coconut palm of flavor. Rounding out the grouping is the superstar Citra, a dual purpose lemon citrus mistress of bred for IPAs that we use quite a bit.
Solemn Gardens debuts Friday at 5PM at the brewery and the long and short of it is that this beer is different and will sell quickly.
Sometimes at Solemn Oath we listen to rock and sometimes we listen to rap. On occasion you might hear some jazz, pop, or a splash of early punk. The important thing to realize is that we’re always lively. Always accomplishing something. Always planning for what we hope will not be your favorite new thing, or the brewery’s favorite new thing, but our favorite thing together. Never complacent and always adapting. Changing the world, probably.
