Big, roasty, and hoppy. What's not to love about a double American stout? They have this kind of split personality that sucks you in and wraps you in a warm, furry, dark blanket, then hog-ties you in said blanket and beats you silly with an escalatingly-painful array of weapons that culminates with a sack of military-grade potatoes. Tim isn't very fond of Belgian tripels, so why the hell would we brew one? Well, this is the same reggae-hating guy who planned his wedding in Jamaica, so we're pretty sure there's a little masochism going on here. Straw-colored and effervescent, our tripel is big on fruity, bubble-gummy esters with just enough grassy hop character to balance. Light-bodied but sturdy; warming but not hot. As the 2013 hop harvest starts making its way to breweries across the country, we find ourselves in ample supply to bring back this hop-forward Belgian IPA.
